It’s real close now. You can see the results of my windowpane test here. The main difference is that I extended the autolyse to 30 minutes. It was completely unintentional. I ran to the store to get something and ended up taking 10 minutes longer than I had intended. I ended up with a much better windowpane.
I also added ¾ cup of barley flour. This made the crumb a little more crumby (pun fully intended!) Next time I’ll try adding a little less barley – probably just slightly less flour altogether.
I got the best rise out of this bread that I’ve gotten yet. It slashed easily and I even managed to get a little bit of oven spring out of it.
I added a little more salt in an attempt to make the holes smaller and more regular. This appears to have worked as well.
After a couple more tries I’ll post my recipe.
