I made this colorful meal today for my kids and I (Shari was gone for the day). I was intending to make rice, but got back late and didn’t want to wait to cook it, so I dug up some potatoes. I only had two small potatoes, but noticed there was a sweet potato so I thought I’d try that as well.
For the potatoes I thinly sliced 2 small potatoes and 2/3 of a large sweet potato. I sauteed those in butter and minced fresh rosemary, freshly ground pepper, and salt. They turned out quite well.
For the fish I sauteed dried cranberries and fresh dill in butter for a couple minutes. I salted and peppered the cod and then moved the cranberries to the sides of the pan and drop the cod into the butter to saute until flaky.
The snow peas were just steamed. I added a little olive oil and salt.
That does sound colorful. Color balance on a plate is important as is taste.
