I started with the HarvestEating tomato sauce. Go there and watch the video. It will give you the gist of how to make this sauce. I have simply added a few minor touches to it because I really like puttanesca sauce.
- 1 28oz can San Marzano tomatoes (very important to get San Marzano)
- 1/4 cup extra virgin olive oil
- a few sprigs of thyme
- a few sprigs of rosemarry
- a few sprigs of oregano
- 1/4 medium onion chopped
- 6 sliced garlic cloves
- a pinch of cyan pepper
- 8 mashed anchovies
- a handful of sliced olives
- 2-3 tablespoons of capers
- salt
- pepper
Gently simmer the herbs, onions, and garlic in the oil for about 20 minutes. Add the tomatoes and anchovies. Blend with an immersion blender till still slightly chunky (or desired texture). Add the remaining ingredients and bring to a gentle simmer. Serve immediately.
